Ingredients

20 minutes
Serves 8 servings
  1. 2 pounds (900 grams)Brussels sprouts, washed, trimmed, leaves separated
  2. 1 teaspoonsalt (for the pot)
  3. 2 clovesgarlic, finely chopped
  4. 1small shallot or yellow onion, finely chopped
  5. Zest of 1 lemon
  6. Juice of 1 lemon
  7. 1 tablespoonhoney or maple syrup
  8. 1 teaspoonDijon mustard
  9. 1/2 cup (120 ml)extra virgin olive oil
  10. Freshly ground black pepper, to taste
  11. 6 tablespoonsdried raisins or dried cranberries
  12. 6 tablespoonsraw almonds, whole, toasted and chopped or sliced

  1. 1

    Prepare a large bowl of ice water. In a large pot of boiling salted water (1 teaspoon salt), blanch the Brussels sprout leaves until bright green and just tender, less than 2 minutes. Drain and immediately plunge into the ice water. Drain again and dry thoroughly.

    In a small bowl, whisk together the shallot, lemon zest, lemon juice, honey, mustard, salt, and pepper. Continue whisking while slowly adding the olive oil until emulsified, or place all ingredients in a jar and shake well.

    In a large serving bowl, toss the Brussels sprout leaves with the dried cranberries or raisins, almonds, and just enough vinaigrette to lightly coat. Taste and adjust salt if needed.

    Serve and enjoy!
