A unique salad made with Brussels sprouts—maybe a bit wintry, but I found them super fresh and we really enjoyed this at our lunch!

Prepare a large bowl of ice water. In a large pot of boiling salted water (1 teaspoon salt), blanch the Brussels sprout leaves until bright green and just tender, less than 2 minutes. Drain and immediately plunge into the ice water. Drain again and dry thoroughly.

In a small bowl, whisk together the shallot, lemon zest, lemon juice, honey, mustard, salt, and pepper. Continue whisking while slowly adding the olive oil until emulsified, or place all ingredients in a jar and shake well.

In a large serving bowl, toss the Brussels sprout leaves with the dried cranberries or raisins, almonds, and just enough vinaigrette to lightly coat. Taste and adjust salt if needed.
