Fry peanuts and cashews until golden, or use roasted. Fry green chillies and curry leaves until crisp.

In a large bowl, combine cereals, raisins, potato sticks, nuts, and fried leaves/chillies.

Heat oil and ghee. Add mustard, cumin, coriander, and fennel seeds. Let them crackle.

Add hing, then lower heat. Add turmeric, chilli powder, black pepper, and salt. Stir briefly.

Pour hot tempering over cereal mix. Toss gently to coat everything evenly.

Sprinkle chaat masala and toss again.

Cool completely, then store in an airtight container.
Tips
Stays crunchy for 3–4 weeks. Keep the flame very low once the powdered spices go in. Ghee gives that lovely rich aroma and helps the masala stick. Curry leaves + hing give that authentic Bombay mix flavour.
