Heat a tbsp of oil in a pan, when the pan starts to smoke add the Salmon, skin side down. Turn the heat to half at this point.

Pile the peas and beans into a jug along with 50ml of water. Microwave for 3 mins on high. Use this as a timer for your Salmon.

Divide the pea shoots between two dishes and start the dressing. Start with a three finger pinch of salt and pepper in a bowl, add the zest a whole lemon and the juice half of it. Whisk in a tbsp of oil.

When the timer goes, take the salmon off the heat and flip it over skin side up.

Drain the peas and coat in half the dressing. Then spoon over the pea shoots.

Dot with goats cheese

Place the salmon on top, finish with chopped spring onions and the remaining dressing.
