Ingredients

  1. Pumpkin - 2 cups, cut up and cooked and pureed or smashed
  2. Brown sugar - 2 tbl spoons
  3. 2 mlGround cinnamon
  4. 1 pinchsalt
  5. Eggs - 2, beaten
  6. 180 mlFlour
  7. Baking powder - 1 tbl spoon
  8. Vegetable oil (for frying)

Steps

  1. 1

    Once the pumpkin is smashed, whisk this along with the sugar, cinnamon and eggs

  2. 2

    Stir in the flour, baking powder, salt and mix until just combined

  3. 3

    Heat about 1cm in depth of vegetable oil in a non stick pan and drop dollops of the batter into it once hot

  4. 4

    Fry until golden and cooked through

  5. 5

    Use some leftover sugar and cinnamon to sprinkle over the hot fritters. Perhaps even drizzle with some honey or syrup if you have some on hand. Yum!
