For the sponge : mix the eggs, sugar and the essence together until the sugar it's a bit melted.

Then add the cocoa powder, flour and baking powder.

Put them in the oven for 40~50 minutes, it depends on the heat and the oven that you have.

After it's done (do the toothpick test) let it cool a bit and then cut it horizontally in 2 or 3 more slices, depending on how big the sponge grown.

Now, whip the whipping cream and add the powdered sugar. beat it really really good.

Then assembly : one slice of sponge then filling (i also put fruit between the slices of sponge) then sponge and so on.

On top you can put the remaining fruits or no, it's up to you.

Let it cool over night or for at least 6 hours (or just eat it after 3, we know you can't wait that much).

If ya don't have a scale, just use your eye... That's what I use :]
