Peel the eggplant and slice it lengthwise into thick pieces. I cut mine in half. Place the slices in a bowl, sprinkle generously with salt, and let them sit for about 15-20 minutes until they release some liquid. Rinse the slices and set aside.

Meanwhile, make the batter. In a bowl, combine 1/2 cup oat flour (about 50 grams), salt, and a little smoked paprika (or any seasonings you like). Gradually add warm water until the batter is not too thick.

Dip the eggplant slices in the batter, then coat them with oat flour (you can also use breadcrumbs). Place them on a baking sheet. If you have leftover beaten egg, brush it on top. Bake in the oven. When the tops are golden, flip the slices and brush with more egg if desired.

Top each slice with ham and cheese, return to the oven, and bake until the cheese starts to brown. Remove from the oven.
