Easy taste dinner though not a lot of vegetable so can add long stem broccoli to go with.

Score the skin of the duck breasts in a crosshatch pattern.

Season both sides of the duck breasts with 7 Thai spice, salt, and pepper.

Cook rice according to package instructions.

Place duck breasts skin-side down in a cold pan. Hold down with a spatula so all skin touches the pan.

Slowly heat the pan, letting the fat render. Flip when the skin releases easily.

Cook the other side until done to your liking. Remove duck and let rest.

In the same pan, add soy sauce to the duck juices. Add cooked rice and stir to coat.

Slice duck breasts along the scored grooves and serve over the rice.
Tips
Hold the duck breast down while the pan slowly heats to ensure even crisping of the skin. Can add spring onions on top to finish the dish.
