Ingredients

6 to 8 round bread
  1. 3large eggs, separated
  2. 3 oz (85 g)full-fat cottage cheese, blended until smooth
  3. 1/4 tspcream of tartar
  4. 1/8 tspsalt
  5. 1/4 tspgarlic powder
  6. 1/4 tspItalian herbs OR you can add their favourite seasoning

    Preheat oven to 150°C/300°F.line a baking sheet with parchment paper.

    Add salt,garlic powder and Italian herbs in cottage cheese and blend until completely smooth (this helps the bread bake evenly and stay fluffy).

    Whip egg whites
    add cream of tartar to egg whites and beat until stiff peaks form.
    ​whisk egg yolks with blended cottage cheese until smooth.

    Gently fold the yolk mixture into the whipped egg whites just until combined (don’t overmix).​spoon into 6–10 rounds on the baking sheet (about 3–5 inches wide).

    Bake 25–30 minutes until golden and set, then cool 10–15 minutes before removing.

    Use as low-carb sandwich buns or sliders.
    toast and top with avocado, cream cheese, or a fried egg.
    serve with soups or salads as a light, high-protein side.
    drizzle with honey and cinnamon for a sweet twist.
    how to store:
    store leftovers in an airtight container in the fridge for up to 3 days.
    To reheat, toast lightly or warm in the oven for a few minutes—this helps restore the fluff!

Tips

No yolk can get into the whites or they won’t whip properly.

For the fluffiest result, stop folding as soon as the batter looks uniform.
​
Store in the fridge and toast lightly to bring back the best texture.
