Raab is a very famous Marwadi drink. The best thing about raab is that it can be had cold in summers and hot as a soup in winters. This nutritious drink can be served as a light meal or side dish, and is often consumed during winter months to combat cold and cough
In summers, it is made with whole wheat flour, barley flour.
In winters, it is made with bajra flour which gives warmth to body and is enjoyed hot as a soup. The charcoal 'Dhungaar' gives it a distinct Smokey flavour.

In a bowl, mix together dahi, water, bajra flour, salt and cumin. Mix nicely to avoid any lumps and put it on gas.

Stir for first 5-7 mins so it doesn't curdle. Add ginger 🫚 and ajwain. Cook for 7-10 mins. Add chopped coriander leaves

Cook it on low flame. It is usually slow cooked until the desired consistency has been reached.

Heat ghee in a pan add tadka

Add in Raab. If you want add some steamed veggies like corn 🌽 carrots 🥕 and cabbage Let it simmer for 3-4 min

If you like …. Heat a charcoal on gas till it is hot. Place a small bowl in the raab pan and put the hot charcoal in it.
Pour 1 tsp ghee on charcoal and immediately cover the pan.
Let it sit for 15 mins till the smoke settles.(it is called Dhungaar)
Uncover the pan and remove the coal piece.
Tips
Never store bajra flour for too long, it turns bitter. You can also mix the chaas & bajra & keep over night. Ferment it and then cook it. It is very good for your Gut Health.
