We wanted to go low carb and this was the best way to have no bread or rice. Adding boiled eggs or some cottage cheese made ito tasteful.
Steps

Cut cauliflower, Brussels sprouts, and potatoes into bite-sized pieces.

Steam all vegetables until just tender.

In a bowl, mix yogurt with all spices and salt.

Toss hot steamed vegetables with the yogurt spice mix and olive oil.

Preheat oven to 200°C.

Spread vegetables on a baking tray, cover with foil, and bake for 20 minutes.

Remove foil, lower oven temperature, and bake uncovered for 5 minutes.

Serve warm.
Tips
Adjust the spice levels according to your taste preference. You can also add other vegetables like carrots or bell peppers for more variety.
