My main motivation when making this recipe was to go beyond ordinary desserts and reflect both an artistic and a dark aesthetic on the plate. What makes this dish special for me is the contrast created by the sour cherry jam and the fact that each cookie looks like a distinct 'character'. My favorite way to consume it is accompanied by a hot coffee, in dim light, while between the pages of a favorite book. The crunchiness of the cookie combined with the warmth of the coffee fully completes my soul.

  1. ​2.5 cups Flour
  2. ​1 tbsp Sugar
  3. 1/2 tspSalt
  4. ​1/2 cup Butter
  5. ​7 tbsp Water
  6. ​Sour cherry jam

Steps

    Add the flour, sugar, salt, butter, and water into a bowl.

    Place the dough in the refrigerator without over-kneading and let it rest for 1 hour.

    Take the dough out of the fridge, knead it briefly, and roll it out thinly.

    Shape the dough using a wide glass. It is important to lift the dough pieces for the eyes and lips. For the nose, take a small piece of dough and place it on the face in a teardrop shape.

    Add sour cherry jam to the other (bottom) piece of dough. One teaspoon will be sufficient.

    After adding the filling, close the edges using a fork. You can add extra details using a small brush.

    Bake at 250°C for 15 minutes.

Tips

Keep it Cold: Use cold butter and handle the dough quickly to ensure a crunchy texture.

​Visual Effect: Use only the dark syrup of the jam for a more realistic "bleeding" aesthetic.

​Delicate Shaping: Be careful when cutting out the eyes and mouth to maintain the facial expressions.

​Heat Watch: Since 250°C is very high, check the bottom of the cookies starting at the 12-minute mark to prevent burning.
