Healthy Tasty No-Sugar Carrot Cake

There are some amazing recipe videos on Instagram with trending high protein and low carb recipes and I have been importing them into my Cookpad collection and sorting them into different folders over the past couple of weeks (quick lunches, sweet, fit, rice paper crunch etc etc.) and trying some. I must say my versions so far are a long way from the glossy IG perfection ones 😅 - there is a huge gap between IG influencers and home cooks like me. So far I need to tweak, bring down to my reality of kitchen and utensils and cook again before being satisfied enough to share on Cookpad with confidence. However 🎉🎉today I tried this one and for the first time my first try was a winner!!! A carrot cake using oats instead of flour, bananas instead of sugar and milk instead of butter (I used coconut milk). I improvised the topping and the whole thing was really delicious. So I am sharing right now!!

Put the oven on to 180ʻº C. Mix all the ingredients together.

Line the baking tin and add the mixture. Put in the oven for 25 mins, test to see if it is done by inserting a chopstick or fork. If it comes out clean we are done. If it doesn't, leave for 5 mins more. When it is done, leave to cool.

Put 4 pieces of dark chocolate in the microwave for 1 minute. Mix with the Greek yogurt

Spread over the cake and put in the fridge until you are ready to serve it. Enjoy!!
