Whisk 200g butter until pale and fluffy. Add 170g caster sugar and mix well.

Add 1 tsp vanilla extract and eggs, one at a time, mixing after each.

Alternate adding 140g self-rising flour and 200g coconut milk, mixing gently. Add more flour if needed for a smooth batter.

Grease the baking tin with 10g butter. Pour in the batter.

Bake at 180°C for 30 minutes. Let cool.

Thaw 150g frozen strawberries under cold water in a sieve. Mash in a pan over low heat. Remove 2 tbsp and let cool for strawberry icing.

Add 40g caster sugar to the remaining strawberries in the pan and cook until thickened to make jam. Let cool.

For vanilla icing: Mix 50g room temp butter with icing sugar to taste and 1 tsp vanilla extract until smooth.

For strawberry icing: Mix 50g room temp butter with icing sugar to taste and the 2 tbsp cooled strawberry mash until smooth.

Layer crumbled coconut milk cake, vanilla icing, and strawberry jam in cups or glasses.

Top each serving with strawberry icing.
Tips
Adjust the amount of icing sugar to achieve your desired icing consistency.
