Old Delhi's Famous Shahi Sheermal

Sheermal is a flavoured flatbread, traditionally made with a maida-based dough, flavoured with saffron, milk and ghee. The word 'Sheer' means milk and 'Mal' means rich food in Persian. In old Delhi there is a place where sheermal made with lots of nuts and ghee and known as 'Shahi Sheermal'.

Take flour in a mixing bowl and add salt.

Add sugar and dry yeast.

Mix well from spoon.

Add butter and warm milk.

Mix all well.

Add warm water in flour and mix well. Knead a soft dough.

Cover with cling wrap and keep aside for 2 hours. After 2 hour it will rise.

Open the cling film and punch again the dough with greased hand.

Add saffron threads, kewra essence and rose essence in lukewarm milk.

Divide the dough into 2 equal parts and make round balls. Sprinkle some flour on rolling surface and roll out dough ball with rolling pin like roti.

Brush butter on baking tray.

Make cut marks from knife on the rolled dough.

Brush the saffron milk on rolled dough.

Sprinkle lots of nuts and sesame seeds. Brush saffron milk again and press with spoon.

Transfer in a greased baking tray and bake it on 200°C for 15 minutes.

After bake brush butter immediately on baked sheermal. Enjoy old delhi's famous shahi sheermal at home.
