Steps

Wash and soak rice in water for 5-6 hours. Similarly wash and soak urad dal in water for 3-4 hours.

Grind rice and urad dal to a fine paste separately. Add salt, water and fenugreek seeds while grinding. Mix both after grinding. Dosa batter is ready. Keep it covered for 8-9 hours.

Add drumstick leaves to the batter. Heat a non-stick pan. Pour a ladle full of batter onto the center of the pan. Spread it evenly with the ladle to make a circle.

Add a teaspoon ghee to it. When crisp, flip the dosa so that the other side also turns crisp. Serve with chutney.

Tips: Extracting the leaves from the stalk is a difficult process. To make it easy, wrap the leaves in a piece of cloth overnight.
