Ingredients

  1. 1 CupCauliflower
  2. 1/2 CupPeas
  3. 1/2 CupCarrot (sliced)
  4. 1/2 CupBeans (chopped into 1 inch piece)
  5. 1/2 CupCapsicum (chopped)
  6. 2 TablespoonsCoriander leaves
  7. 1Green chilli (finely chopped)
  8. 1 TablespoonGinger (grated)
  9. 3 TablespoonsOil
  10. 1 PinchAsafoetida
  11. 1/2 TeaspoonCumin seed
  12. 1 TablespoonCoriander powder
  13. 1/4 TeaspoonTurmeric Powder
  14. 1/2 TeaspoonRed chilli powder
  15. 2Bay Leaves
  16. 1/2 TeaspoonGaram masala powder
  17. 1/2 TeaspoonAmchur powder
  18. 1 CupMilk
  19. 1/2 TablespoonCornstarch

  1. 1

    In a small bowl, make a spice paste by mixing green chilli, ginger, turmeric powder, red chilli powder, coriander powder and little water. Mix well. Keep this aside.

  2. 2

    Heat oil in a non stick pan. Add asafoetida, cumin seeds and bay leaves. Stir for sometime. Now add the spice paste which we had kept aside. Mix well and fry till oil leaves the mixture.

    Now add cauliflower, peas, beans and carrot. Mix well. Cover with a lid and let it cook for sometime.

  4. 4

    If the vegetables are dried up while cooking, add little water and again cover and cook till it is soft and not fully cooked.

  5. 5

    Now add the capsicum and mix well. Let it simmer for sometime. In the mean time, mix cornstarch in the milk and mix well so that no lumps are formed.

  6. 6

    Pour the milk mixture into the simmering vegetables. Add salt and mix. Cover it again and let it cook till the vegetables are fully cooked.

  7. 7

    When it is completely cooked, add garam masala, amchur powder and coriander leaves. Mix well and take if off from heat.

  8. 8

    Serve it hot with roti, naan or steamed rice.
