If you are clumsy like me, you will end up with broken filo pastry sheets that you can't do anything fancy with. Turn them into hot pockets with whatever filling you like.

If you are clumsy like me, you will end up with broken filo pastry sheets that you can't do anything fancy with. Turn them into hot pockets with whatever filling you like.

Boil peas, and potato.

Saute onions and cabbage with some garlic powder, salt and pepper. Add the peas and potatoes. Once mixed well, add cream.

You can add soy sauce and chilli sauce if you like, but since this was for my son, I skipped it.

Layer your tart tin with filo pastry, brush with olive oil. Add the veggie filling. Add cheese and top it off with filo pastry.

Bake at 190C for 15 minutes. Or till you get a golden brown crust.

Note: this was a last-minute-panic kiddy lunch box recipe. If I were to make this for myself I would add a lot of paprika, some soy sauce, perhaps cook the veggies in broth to add more flavour.
