Oatmeal Cookies

So I usually don't like oatmeal cookies coz they're very very 'eggy' in taste. I put together several recipes from the internet, and arrived at my own recipe and guess what, not only was it fabulous, it was eggless! So yaay! Try these at home - simple, easy to make and deliciously yum!

Steps

25 mins
  1. 1

Sift flour into a bowl. Mix in baking powder, porridge oats and sugar.

  2. 2

Melt butter in a saucepan. Add cream, milk and cinnamon powder to it. Stir till fully blended. Add this to premixed dry ingredients. The dough should be sticky. If it's not sticky enough, add milk till sticky.

  3. 3

Preheat oven at 160 for 5 minutes. Line tray with parchment paper. You don't need to butter it because there's enough butter in the dough.

  4. 4

Lightly wet your hands, make tiny balls of dough, flatten into shapes of your choice and place on tray.

  5. 5

Bake at 160 for 10 minutes. Pull out of the oven. Brush the top lightly with melted butter. Put back in over for 5 minutes. Let them cool completely. Your cookies are done! Light, crisp and crunchy. Enjoy with tea or even ice cream :)

I cook because I love to eat. It's really as simple as that. Fortunately for me, I married a foodie (who happens to be a much much better cook than me). Fairly early in the marriage I realized the best way to avoid ego clashes about each other's cooking was to make things Karan had no expertise on. And thus my tryst with baking began. Today, I can't imagine a life without my oven, maida, butter and sugar :)
