Quinoa is a grain which has been used in Peru and Bolivia for thousands of years. It is gluten free and a complete protein. Very good for diabetes, migrane headaches and many other ailments. I have tried to put a twist to this dish and added some Indian Spices and it came out absolutely delicious and may I say with very little efforts.

Ingredients

  • 1 CupQuinoa
  • 1 Tablespoonvegetable oil
  • 1/2 TeaspoonMustard Seeds
  • 1 TeaspoonCumin Seeds
  • 1/2Onion Chopped Medium
  • 2 ClovesGarlic chopped
  • 1 Teaspoonchopped ginger
  • 1/2 Teaspoonblack pepper cracked
  • 1/2 Teaspoonkosher salt
  • 1 TablespoonUrad Lentil
  • 1 TablespoonCashew nuts - broken
  • 1/2Red Bell Pepper Choped
  • 1 1/2 CupsWater Hot

    Heat the cooking Pot. Use a heavy bottom pot I used cast iron Pan. Add oil and cumin seeds and mustard seeds. Cook 2 mts covered. Add chopped onions and cook 4 mts. Add Red Bell Pepper and cook 3 mts. Add remaining items exept salt and Quinoa and cook 4 mts.

    Now Add Quinoa and toast for 2 mts. Add Hot water and salt. Bring to a boil and reduce heat to simmer. Cook exactly 15 mts. covered. Garnish with fresh cilantro and serve with anything. I served it with Vegetable stew.

Born in India and now living in Chicago. Food is celebration for me. Indian foods are not only great in taste but have a health factor related to it. Indian food and spices are not only tasty and flavorful; they also add a lot of benefits to our health. I have tried to take advantage of herbs and spices and infuse the American and Italian lcuisine. It is sort of East meets West. My dishes are easy to make and everyone can do it. Just come on and join me in my kitchen. We will have a lot fun!I use a unique mixture of Ginger, Garlic and Tumeric (in equal parts) with peppers, like long chilli spicy, habernero even Ghost peppers. It is potent and healthy.Dont't live to Eat, Eat to Live. Worked at Chefluciano's Restuarant in Chicago for 30 years. Now I am retired.
