Bring coconut milk to a simmer with a pinch of salt. Add rice. Cover. Cook approximately 8-9 minutes. Remove from heat. Leave covered 2 minutes. Uncover and dont touch for another two minutes. Fluff very briefly with a fork.

Add cilantro. Zest the lime over the rice. Add lime juice. Fold together

Garnish with toasted coconut if desired.
