  1. 2 cupjasmine rice
  2. 3 1/2 cupcoconut milk
  3. 1 bunchcilantro; chopped
  4. 1lime
  5. 1 pinchsalt

  1. 1

    Bring coconut milk to a simmer with a pinch of salt. Add rice. Cover. Cook approximately 8-9 minutes. Remove from heat. Leave covered 2 minutes. Uncover and dont touch for another two minutes. Fluff very briefly with a fork.

  2. 2

    Add cilantro. Zest the lime over the rice. Add lime juice. Fold together

  3. 3

    Garnish with toasted coconut if desired.

    Variations; Kaffir lime, tarragon, parsley, sage, basil, lemon, orange, grapefruit, kiwi, lemongrass, diced jalapenos, cumin

I make a similar rice dish but use 1/2 chicken stock & 1/2 coconut milk for the liquid. Takes 15-20 minutes to cook. :hungry
