Chicken n Veggie Filo Packets

Kingsley and I decided to completely rearrange our apartment to create more space, and of course make it look prettier. Besides cooking, I have gotten into painting, so now we have wall art to find a place on our wall, so all of this rearranging and cleaning took a bit of time. Once it was done, we were very excited with the new look, but equally tired. Our pantry and freezer are full of ingredients that come to the rescue on evenings like this – so I quickly put this no non-sense filo packets together. If you google, you will come across many chicken and veggie filo packets, but I literally went to the freezer pulled the ingredients out and put this dish together. I even got some time to skype with my mom while the packets baked :). These are so simple but yet very delicious and crunchy!

Sauté some onion and garlic in some olive oil

Add the chicken breast pieces in the oil and add some salt and pepper and let it cook

A few minutes later add the veggies of your choice (I went with beans, carrots and corn)

Give it a good mix and let it stay on the stove for a few more minutes and take it off

In the mean time, get the thawed filo sheets

We will use 2 sheets for each packet, so it doesn’t tear with the filling

Lay a filo sheet and brush it with some olive oil
- 8
Add another sheet, do the same and add the chicken veggie mix to it

Add some crumbed cheese on top of this and fold the filo sheets to make a packet
- 10
Brush some olive oil on the top and bake in a preheated oven at 190C / 375F until it is golden brown

This should take about 20ish minutes

Serve warm!
