Moong Dal and Peanuts

We recently began to pursue a healthier lifestyle. We had talked about this over a few weeks and even months, but never really got down to accomplishing it... Simply because I do quite a bit of cooking for the blog and we are either hosting people for dinner or are invited to eat. Somewhere along the way, the carbs and fat became major companions. The veggies were being consumed here and there, and this week I had a no carb and no fat week in our kitchen. Lots of whole grains and protein, ofcourse keeping the rice and other favourites away was hard, but a few days into it - we have felt great and are enjoying our healthier life style. This curry is really simple to put together, because the pressure cooker comes to the rescue :)

Ingredients

  • 1 cupMoong Dal water : washed and soaked in
  • 1Onion large : diced
  • 2Tomatoes : medium chopped
  • 2chilies Green : slit lengthwise
  • 1 tbspGinger Garlic & Paste : (or add minced ginger and garlic)
  • 2 tbspsGaram Masala :
  • 1 tbspCoriander Powder :
  • 1 tbspChilli Powder :
  • handfulPeanuts : a
  • to tasteSalt
  • 1 tspMustard Seeds -
  • 1 tspCumin Seeds -
  • Oil

Steps

  1. 1

    In a pressure cooker, add some mustard seeds and cumin seeds to some oil

  2. 2

    When the mustard seeds start spluttering add the onions, green chillies, ginger and garlic and saute for a few minutes

  3. 3

    When the onions turn soft, add the tomatoes and the masala powders

  4. 4

    Next add the peanuts and let it all cook for a couple of minutes

  5. 5

    Finally add the moong dal, couple of glasses of water,  and some salt

  6. 6

    Give this a good stir, put the pressure cooker lid on and allow it cook over a few whistles

  7. 7

    Once the pressure is off, your curry should be done!  If the curry is not thick, mush some of the moong dal in the pot and allow it to cook over medium heat, this should thicken it up

  8. 8

    This goes great with some chappathis! It is very filling and really healthy!

Welcome to my Blog The Eaterspot. My blogging journey began in March 2010. I had just relocated from the US, and living in Wellington, New Zealand was definitely a whole lot different from the US. The day after I landed here, I began a full time job, but I still had a whole lot of free time after 5pm.
