Fresh Spring Rolls

This has definitely got to be one of my favourite dishes ... I can eat it for lunch or dinner and what you can do with a simple rice wrapper is endless. This is just so refreshing and definitely so much more healthier than the fried variety. If I made a non-veg spring roll I would stuff it with chicken as that is usually the popular choice of meat at home, shrimp works great, so does pork if you are a fan. Or you can do it with fresh veggies and that is just so yum! This definitely is a crowd pleaser and will be gone with MINUTES!!!!!!
If you are going with meat, make sure its cooked! Shredded Chicken, pork or whole shrimp should work great
Veggies: _ Cucumber, carrots, capsicum, parsley, mint leaves, avocados, lettuce, cilantro, spring onions all work great ... make sure its fresh

If you can't be bothered I am sure a store bought spring roll dipping sauce should be fine too!

Cook the rice vermicelli in some boiling water for 3-5mins. The spring rolls in the picture did not have them in it, but adding the rice vermicelli makes the rolls definitely a LOT filling!

Before getting to assembling the spring rolls, make sure all of the filling is chopped and washed and prepped and ready to go. Also make the dipping sauce and set aside

Fill a large bowl with hot water. Gently place a rice wrapper in the water and allow it to soften. This should only take a few seconds. Lay the wrapper flat on a plate or cutting board. Next across the center place the filling, leaving 2 inches uncovered on each side and gently but tightly roll the wrapper

If they are super long, I slice them right in the middle and serve it with the dipping sauce
