Fresh Spring Rolls

This has definitely got to be one of my favourite dishes ... I can eat it for lunch or dinner and what you can do with a simple rice wrapper is endless. This is just so refreshing and definitely so much more healthier than the fried variety. If I made a non-veg spring roll I would stuff it with chicken as that is usually the popular choice of meat at home, shrimp works great, so does pork if you are a fan. Or you can do it with fresh veggies and that is just so yum! This definitely is a crowd pleaser and will be gone with MINUTES!!!!!!
If you are going with meat, make sure its cooked! Shredded Chicken, pork or whole shrimp should work great
Veggies: _ Cucumber, carrots, capsicum, parsley, mint leaves, avocados, lettuce, cilantro, spring onions all work great ... make sure its fresh

Cooking Instructions
- 1
If you can't be bothered I am sure a store bought spring roll dipping sauce should be fine too!
- 2
Cook the rice vermicelli in some boiling water for 3-5mins. The spring rolls in the picture did not have them in it, but adding the rice vermicelli makes the rolls definitely a LOT filling!
- 3
Before getting to assembling the spring rolls, make sure all of the filling is chopped and washed and prepped and ready to go. Also make the dipping sauce and set aside
- 4
Fill a large bowl with hot water. Gently place a rice wrapper in the water and allow it to soften. This should only take a few seconds. Lay the wrapper flat on a plate or cutting board. Next across the center place the filling, leaving 2 inches uncovered on each side and gently but tightly roll the wrapper
- 5
If they are super long, I slice them right in the middle and serve it with the dipping sauce
- 6
Absolutely yum!

Farmhouse Recipe: Fresh Spring Rolls With Mizuna Farmhouse Recipe: Fresh Spring Rolls With Mizuna
Fresh spring roll or rice paper wrappers can be stored for a long time so I usually have some in stock. I vary the fillings depending on the season, but I especially like this combination of mizuna greens and cream cheese, and I always make this recipe for parties. The formal name is "Fresh spring rolls with mizuna and cream cheese".My method of rehydrating the rice paper wrappers is pretty lazy, but I just soak them in lukewarm water for 20 to 30 seconds, put them on a cutting board and immediately wrap the fillings with them. That's it. The wrappers do tend to stick together, so put a little space between each roll when you line them up on the serving plate. Recipe by FarmersK cookpad.japan -
Fresh Spring Rolls with Shrimp Fresh Spring Rolls with Shrimp
I love fresh spring rolls, but they are rather expensive to buy readymade, so I made my own. I can't remember the shock I felt when I tried shiso leaves in them...it was a great match. Since then I've always used shiso leaves in these. The shiso leaves make a big difference, so I definitely recommending including them. The other vegetables can be anything you like. Try out your favorites. You can use canned tuna or ham etc. instead of the shrimp. The last important part of the recipe is the rolling. Just try it several times to get a feel for it. For 7 rolls. Fresh Spring Rolls Fresh Spring Rolls
I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. When I hear "spring rolls," I'm reminded of my mother's recipe that included cellophane noodles! This is now one of my family's favorite dishes.-You can use any kind of pork, but I personally recommend coarsely chopped shreds (offcuts) of pork.-Make sure the filling is cooled down before you wrap it up.-It tastes good without any sauce, but you can serve with ponzu sauce if you'd like (says my boyfriend). For 10 spring rolls. Recipe by Joma cookpad.japan -

Fresh Spring Rolls with Cheese & Cucumber Chikuwa Fresh Spring Rolls with Cheese & Cucumber Chikuwa
Cucumber chikuwa is a great appetizer, and I made it to be more voluminous! You can eat a lot of these spring rolls in place of a salad I stuff chikuwa with whatever I fancy to enjoy various kinds of fresh spring rolls. It's quicker to rehydrate rice paper wrappers in hot water, but they will be difficult to handle if they soften too much. So you won't fail much if you rehydrate them in water until you get used to making fresh spring rolls. If the rice paper wrapper is too hard to roll, it will soften with the moisture from the vegetables, so let them rest for a little. The rice paper wrapper will soon soften enough to roll.
