Ingredients

6-serving
  • 4eggs whole
  • 4egg whites
  • 2 tbspswater
  • 1 cupMozzarella cheese shredded (2% low fat) , divided
  • 1/2 cuptomatoes chopped , seeded * (see note below)
  • 2bacon slices cooked , (regular or turkey)
  • 1/4 cupbasil chopped fresh

Steps

  1. 1

    Preheat oven to 350° F.

  2. 2

    Beat together the whole eggs, egg whites and water with a whisk in a medium siaxe bowl until blended.

  3. 3

    Stir in 1/2 cup of the cheese, tomatoes, bacon and basil. Pour into a greased 9-inch pie plate.

  4. 4

    Bake 25 minutes or until puffed and golden brown. Sprinkle with remaining cheese; bake an additional 5 minutes or until cheese is melted. Cut into 6 equal sized servings.
