This has subtle, fresh flavours that work well together. Add more or less of the sauce ingredients to taste

Ingredients

  1. 300 gramsdried rice noodles (I use brown rice noodles)
  2. 1brown/cooking onion, diced
  3. 2 tspfinely grated ginger
  4. 500 gramsturkey mince. You can also use chicken or pork mince
  5. 500 gramsfrozen mixed vegetables, thawed. I used a carrot, broccoli, sugar snap pea mix
  6. 1/3 cupoyster sauce
  7. 4 tbspsoy sauce
  8. 1/2 tspchinese five spice
  9. 1or more red chillies, finely sliced
  10. 1/4 cupfresh coriander, finely chopped

Cooking Instructions

  1. 1

    Cook noodles in a saucepan of boiling water for 5 mins. Drain after the 5 mins

  2. 2

    Heat a wok or large frying pan and add oil. Swirl to coat wok and add onion and ginger. Stir fry for 2 mins or until tender

  3. 3

    Add mince to wok, break up lumps as you stir for five minutes or until mince is brown.

  4. 4

    Add vegetables, oyster sauce, soy sauce and five spice, stirring for another 2 minutes.

    Snip drained noodles to shorten, add to wok with chilli and coriander, tossing to combine.

    You can serve on top of rice if you wish. Serve and garnish with coriander leaves
