In a bowl mix 2 cups of Wheat flour and 1/3 cup of Ragi/Caracan millet add water, mix without lumps. The batter consistency should be little lose than ordinary rice dosa batter.

Add chopped onions, finely chopped chillies and coriander leaves. Also, add salt and 3 tablespoons of Yoghurt.

Let the batter set for 30 mins. Add oats 10 min before you cook. Now, heat the pan and start pouring the batter from outside (form a circle) and keep pouring batter into the circle until it's filled.

Cook in medium-low flame until the edges start to rise and then flip it over. Contiue to cook 4-5 dosa with the batter.

Note: Use less Ragi/Caracan millet flour since it makes the dosa dry, however wheat flour gives the soft and spongy texture. Half soaked oats will give a crunch while you munch it!
