Steps
- 1
Preheat oven to 350F, grease and line a 8"x 11" pan (or a 9 1/2" round springform) with parchment paper.
- 2
Beat butter, 1 1/2 cups of the sugar and all the zest until combined.
- 3
Add half of the almonds, stirring to combine.
- 4
Slowly beat in the eggs. Add the remaining almonds, flour and salt and beat until smooth.
- 5
Pour batter into pan and level off.
- 6
Bake for 50 to 60 minutes until just set.
- 7
Just before the cake comes out of the oven, mix the citrus juice and remaining 1/3 cup sugar in a saucepan. Bring to a boil, then remove from heat.
- 8
When the cake comes out of the oven, brush it with the syrup, allowing it to soak in.
- 9
Let the cake cool completely before serving.
