its a creamy , subtly garlicy, totally versatile and easy dip which can also double up as a sandwhich spread or maybe a creamy stuffing for your pita bread.

Mince the garlic cloves in a mortar and pestle. Adding a little salt to the garlic just before mincing, makes the process much easier.

Put the hung yogurt in a bowl and whisk till it becomes really smooth and shiny, from dull and lumpy.

Add the cream, garlic and little salt. Whisk again. Longer.

Add little water, just enough to get a dollopy consistency.

Serve with vegetables par boiled or raw, cut up in sticks, bread sticks and other crisps.

NOTE-You can make a zillion dips out of this by adding -Freshly crushed coarse pepper corn, a table spoon of cheese spread, just plain old tomato ketchup, pepper and oregano, chopped up gherkins and olives, cheese spread and spring onion, chives, finely chopped mint………….i could go on and on.
