Stuffed Okra or Bharwa Bhindi - Step by Step Recipe

Last two months have been hectic, travelling, falling sick and no running and blogging!
Am back now all well, healthy and happy… before I begin with today’s recipe, I have to tell you that I won my first prize in the Blogger World.
I had sent ‘Soya Stir fry Recipe’ to Pari’s event ‘Only Cooking with Soya’ and to my surprise I was declared the winner for that event; won a cook book by Tarla Dalal – Low Cholesterol Recipes.

Here’s the recipe:

\Wash and completely dry the bhindi / okra (wipe with a cotton kitchen cloth to ensure there is no moisture remaining)

Cut the top of the okra and slit it lengthwise / vertically keeping the shape intact (do not cut it into 2 pieces just make a deep incision to fill the stuffing)

Roast the fennel and cumin seeds and roughly ground them.

In a bowl add the turmeric, cumin powder, fennel powder, red chili powder, coriander powder, amchoor powder and mix well. Check the taste for seasoning.

Fill this stuffing in the okra evenly.

Take a heavy bottom pan or a non-stick pan, add 2-3 tbsp spoon of oil, once the oil is hot add a pinch of asafoetida, then add okra/ bhindi and shallow fry on all the sides till it cooks. Stir occasionally in between to ensure all sides are cooked.

Serve hot with phulka’s or roti.
