  • 1cinnamon stick
  • Lemon or orange peel
  • 1 cuplong-grain white rice (200 grams)
  • 14 packetsstevia

    In a pot (preferably nonstick), add the milk, cinnamon stick, and citrus peels. Use a vegetable peeler to remove the peel from the citrus, making sure to get just the colored part and as little of the white pith as possible. The cinnamon stick and citrus peel are optional, but they really make a difference. Bring the pot to a boil over high heat.

    Once the milk is boiling, reduce the heat to medium and add the rice. Stir well and cook for 10 minutes, stirring every 2 minutes. Keep an eye on the pot so the rice doesn’t stick to the bottom.

    After 10 minutes, add the sweetener. This amount replaces about 1/2 cup (100 grams) of sugar. Seven packets of stevia equal about 1/4 cup (50 grams) of sugar, so I used 14 packets. If you have a different sweetener (suitable for long cooking), check the package for substitution ratios. Sweeten to taste—add gradually and taste as you go until you’re happy with the result.

    Cook for 5 more minutes, stirring, then remove from heat. Your rice pudding is ready to share! You can sprinkle ground cinnamon on top to enhance the flavor. If you have celiac disease, make sure all your ingredients are certified gluten-free. Enjoy!
