I’ve tasted Taro cake many times on my visits to Taiwan and I love it. I’ve used today shrimps and chicken sausage and didn’t use enoki mushroom. One can use any filling
Steps

Wash the taro, peel and cut into cubes, mince ginger and garlic, mince shrimps and chicken sausage

In a pan heat oil and add minced ginger and garlic and cook for 2 mins on low flame
- 3
Add minced shrimps and chicken sausage, cook for 2 mins, and add cubed taro, stir for 1 min, add salt and sugar and stir

Add oyster sauce, and mix, add hot water and cover to cook

Add rice powder slurry and mix well, add sesame oil, white pepper powder, pour into a greased tin, steam for 40 mins

Check doneness and cool completely - demould and cut into cubes and set aside

In a pan heat oil and fry the cakes, set aside

Plate and enjoy
Tips
Cool the cakes completely before demoulding
