This is a summertime cake my family eats. It is refreshing and delicious. Simple and inexpensive.
My family loves this and jokes around and calls it The Orange Miser Cake because literally nothing is wasted. Not even the peels 🍊

This is a summertime cake my family eats. It is refreshing and delicious. Simple and inexpensive.

In a large mixing bowl, cut up orange into very small pieces. Smaller, the better

Add eggs, sugar, flour, oil, baking powder and water.

Preheat oven to 350°F

Use an immersion blender to mix and blend everything very well into a smooth batter. (Tip: I will often use a standard blender to process the oranges before using the immersion blender).

Grease a 9x5 baking pan (or use parchment paper)

Pour in the mixture

Bake in oven for 45-55 minutes (depending on your oven).

While the cake is baking, make the icing:

To a sauce pan, add powdered sugar, milk, orange juice and vanilla.

Using low heat, whisk together until your glaze is smooth. Remove from heat.

When cake is ready, allow to cool on a wire rack and drizzle icing all over it.
Tips
If there is a large amount of pith (white part), you can remove it before blending.
