Steps
- 1
In a bowl, combine the flour, salt, sugar, oil, and warm water. Knead for 8–10 minutes until smooth. Cover and let the dough rest for 30 minutes.
- 2
Divide the dough into 4 equal balls. Lightly oil them and let them rest for another 15 minutes.
- 3
Roll or gently stretch each dough ball into a thin square.
- 4
Place the dough on a lightly oiled pan over medium heat.
- 5
Crack one egg into the center. Sprinkle with onion, green chilies, spring onions, salt, and black pepper.
- 6
Fold the four sides toward the center to form a square, sealing the egg inside.
- 7
Cook for 3–4 minutes on each side until golden brown and the egg is cooked through.
- 8
Brush with a little butter before serving, if desired
Tips
Resting the dough makes it easier to stretch thin without tearing.
Cook over medium heat so the roti becomes crispy while the egg cooks evenly.
Add grated cheese, shredded chicken, or leftover curry for a delicious variation.
