Ingredients

  • 1 cup (125 g)all-purpose flour
  • 2 tbspsugar
  • 2 tspbaking powder
  • 1/4 tspsalt
  • 1large egg
  • 3/4 cup (180 ml)milk
  • 2 tbspmelted butter (or vegetable oil)
  • 1 tspvanilla extract (optional)
  • 1/2 tbspButter or oil for greasing the pan
  • For Scrambled Eggs
  • 2 tbspmilk or fresh cream
  • 2large eggs
  • 1 tbspbutter *
  • Salt to taste
  • 1/4 tspblack pepper
  • 2 tbspchopped spring onions (for garnish)

    Method

    A. Prepare the Pancakes

    1. In a bowl, combine the flour, sugar, baking powder, and salt.
    2. In another bowl, whisk together the egg, milk, melted butter, and vanilla.
    3. Pour the wet ingredients into the dry ingredients and mix gently. Do not overmix; a few lumps are fine.
    4. Allow the batter to rest for 5–10 minutes.
    5. Heat a lightly greased non-stick pan over medium heat.

    6. Pour about ¼ cup of batter onto the pan for each pancake.
    7. Cook until bubbles appear on the surface and the edges begin to set (about 2–3 minutes).
    8. Flip and cook the other side for another 1–2 minutes until golden brown.
    9. Keep warm while making the remaining pancakes.

    B. Prepare the Scrambled Eggs

    1. Crack the eggs into a bowl.
    2. Add the milk, salt, and black pepper.
    3. Whisk until smooth and well combined.
    4. Melt the butter in a non-stick pan over low to medium heat.
    5. Pour in the egg mixture.

    6. Stir gently with a spatula, pushing the eggs from the edges toward the center.
    7. Continue cooking until the eggs are soft, creamy, and just set. Avoid overcooking.
    8. Sprinkle with chopped spring onions.
