Green Papaya
This humble Bengali-style dish made with grated green papaya and potatoes is one of my absolute favourites. Although I'm not a big fan of raw papaya, this is one dish I can never resist. Soft, lightly spiced, and full of homely flavours, it pairs wonderfully with both steamed rice and roti.

Green Papaya
This humble Bengali-style dish made with grated green papaya and potatoes is one of my absolute favourites. Although I'm not a big fan of raw papaya, this is one dish I can never resist. Soft, lightly spiced, and full of homely flavours, it pairs wonderfully with both steamed rice and roti.
Steps

First, peel the green papaya, cut it into pieces, remove the seeds and the soft inner core, and wash it thoroughly. Then, grate the papaya using a grater until finely shredded.

Heat oil in a pan and fry the potatoes with little salt and keep them aside.

In the same pan heat 2 tbsp of oil,add whole cumin seeds, bay leaf, and dried red chillies,stir for 30 seconds.

Then add grated green papaya and mix well. Sprinkle salt, cover, and cook until the papaya softens.

Add the ginger-green chili paste, cumin powder, turmeric powder, red chilli powder. Mix thoroughly and cook covered until the spices blend well with the papaya.

After 3-4 minutes, add the fried potatoes,salt to taste and sugar to balance the flavor, 3-4 tablespoon of water.Cover and cook until everything becomes soft and nicely coated with the spices.

Finish with garam masala powder and ghee. Mix gently and switch off the gas and cover for 1-2 minutes.

Then serve hot with steamed rice or roti.
