Green Papaya Tikki

Peel and grate the raw papaya.
Sprinkle a little salt over it and let it rest for 5–10 minutes. Squeeze out all the excess water using your hands or a clean kitchen towel. - 2
In a large bowl, combine the grated papaya, mashed potato, onion, green chilies, ginger, coriander leaves, and all the spices. Add breadcrumbs or cornflour and mix well until the mixture holds its shape.

Divide the mixture into equal portions and shape them into round, flat tikkis. Heat oil in a non-stick pan over medium heat.
Shallow fry the tikkis for 3–4 minutes on each side until they turn golden brown and crispy. - 4
Remove and place them on a paper towel to absorb excess oil. Serve hot with: Mint chutney or Tomato ketchup or Yogurt dip of Tamarind chutney.
