In a skillet on med heat, add olive oil, spinach, mushrooms, garlic and onion. Stir. Cook about 5 min

In a small oven safe ramekin sprayed with cooking spray, add your spinach mixture, salt and pepper and make a small well on top.

Crack the egg into the well. Cook 10 min in the oven.
