Apple Pie with Caramelized Apple Filling and Crispy Crumb Topping

This apple pie surprised me in the best way! 🍎 It has a tender shortcrust base, plenty of aromatic apple filling, and a golden, crumbly topping.
The secret is in the apple filling. The apples are cooked with sugar and butter until the liquid evaporates and the remaining apple syrup starts to caramelize. Then everything is blended until smooth, creating a rich, fragrant and wonderfully tender apple filling.

Steps

Peel and core the apples, then cut them into small cubes. Add the sugar and mix well.

Transfer the apples to a frying pan and sauté them. Add the butter and cook until the liquid has evaporated.

Once only the apple syrup remains, continue cooking until it starts to caramelize.

Transfer the apple mixture to a suitable bowl and blend with an immersion blender until smooth. The apple filling is ready.

To make the dough, combine the flour, baking powder, salt and sugar.

Add the butter, cut into small cubes and slightly softened. Rub everything together with your hands until you have a uniform crumb. It is easier to do this while wearing disposable gloves.

Add the sour cream and knead until a soft dough forms.

Wrap the dough in plastic wrap and refrigerate for 10 minutes.

Take 2/3 of the dough. Put the remaining 1/3 in the freezer for now.

Use a 20–22 cm baking tin. Spread the 2/3 portion of dough evenly over the bottom of the tin and form a border about 3 cm high.

Add the apple filling and spread it evenly.

Take the dough from the freezer and grate it using a coarse grater directly over the filling. Spread the crumbs evenly over the top of the pie.

Bake at 180°C (355°F) for about 35–40 minutes, until golden brown.
The pie is ready! Let it cool slightly, slice and enjoy. 🍎🥧
