The first time I made this surprisingly hubby ate it over and over again. It is very easy to make for breakfast or light dinner. You can add sausages or more veggies if you want.

The first time I made this surprisingly hubby ate it over and over again. It is very easy to make for breakfast or light dinner. You can add sausages or more veggies if you want.

Cut your plantain in circles or squares, salt and fry in hot groundnut oil till brown, then remove and leave to drain in a sieve.

Remove the oil from the pan and pour in your chopped veggies to cook a little. Bring it down and let to cool for awhile.

Beat the eggs, mix with the milk, add the salt, pepper and maggi.

Beat till properly mixed then pour in the veggies and mix.

Put the groundnut oil or butter in a pan, pour in the egg mixture then place the plantain on it.

Lower the heat and cover with a lid. Cook for 10 to 15 mins and it is ready. You can equally use an oven to bake at 180°c for 10mins or until it is not runny.
