Stuffed Grape Leaves (Warak Enab or Yabrak)

This dish has been my favorite since I was a little girl. I loved it when my grandmother, may she rest in peace, made it. I always watched her prepare it. Now that I've grown up, I wanted to make it myself. This is my first time rolling grape leaves and cooking them, and they turned out very delicious, just like my grandmother used to make. I might have taken a while to cook them because I was always hesitant and afraid they wouldn't turn out well. Thankfully, with determination, I made them, and I was expecting the worst, but they turned out very successful.

Ingredients

  1. 2.2 poundsgrape leaves
  2. 2.2 poundsshort-grain rice
  3. 1.1 poundsfinely ground lamb
  4. Salt
  5. Pepper
  6. 1 tablespoonvegetable oil or 1 tablespoon clarified butter
  7. 4 headsgarlic, as seen in the picture
  8. Lamb chops for the bottom of the pot

Cooking Instructions

  1. 1

Mix the short-grain rice, after washing it, with the ground lamb, salt, pepper, and oil.

  2. 2

Start rolling the grape leaves by opening a leaf, placing a small amount of filling, and rolling it up.

  3. 3

Once all the leaves are rolled, prepare them for cooking.

  4. 4

Place the lamb chops at the bottom of the pot and arrange the grape leaves on top. I personally roll small amounts at a time using thread, just like my grandmother did. Place the garlic heads between the layers.

  5. 5

After arranging the grape leaves in a pressure cooker or pot, prepare the broth by mixing water, salt, and lemon juice. The salt should be balanced, and the lemon should be noticeable. Pour the broth over the grape leaves until they are submerged. Close the pot and cook for an hour and fifteen minutes in the pressure cooker. Enjoy!
