Tomatoes and Cottage Cheese

This is something we always ate in the summer in Ohio! I'm guessing people eat this in other states too but topping juicy, sun-ripened tomatoes with mild and creamy cottage cheese was a classic way for us to enjoy tomatoes at their peak. I actually had this recipe shared on a different website, but wanted to share it here too :)

My parents and grandparents just had it plain, with a bit of pepper and maybe salt, but I added a little kick by sprinkling on some hot Jalapenos. You can optionally drizzle on balsamic, olive oil and/or your favorite herbs like basil and cilantro.

Ingredients

  1. 1-2Tomatoes, super ripe
  2. 3-4 scoopsCottage cheese
  3. 1/2Jalapeno or other spicy chili, optional for a kick
  4. to tasteSea salt and fresh cracked pepper
  5. Optional toppings:
  6. drizzle of olive oil
  7. balsamic vinegar
  8. fresh herbs

    Cut tomatoes into wedges or slices, whichever you prefer. If using hot pepper, dice it finely

    Arrange tomatoes on a plate as pretty as you can ;)

    Top with a couple of spoonfuls of cottage cheese. Sprinkle with salt, pepper and hot pepper if using.

    It tastes good just like that but I love drizzling it with balsamic vinegar, olive oil and fresh herbs too!
