Cabbage "Slaw" with Spicy Onion Vinaigrette

This vinaigrette is super flavorful and slightly spicy so it is great with all sorts of vegetables, but cabbage seems to go especially well! If you have tons of cabbage in the fridge or need a good picnic/party salad that will feed a lot of people on a budget, try this recipe out :)

Slice cabbage very thinly and soak in water for a few minutes. Drain well.

Grate the onion with a grater or food processor.

For dressing: In a bowl, combine grated onion, chili paste (if using), salt, soy sauce, vinegar, oil and pepper. Mix well with a wisk or fork.

Pile cabbage on large plate and top with the dressing. Mix with other greens if you like. Tastes great served immediately or after marinating for a while longer.
