Blueberry and Cheese Muffins

This is a yummy, healthy 30 minute recipe! You do not use any butter, instead use olive oil. Also it is not very sweet, so the muffins are perfect for breakfast and kids' sweets, too :)

This is a yummy, healthy 30 minute recipe! You do not use any butter, instead use olive oil. Also it is not very sweet, so the muffins are perfect for breakfast and kids' sweets, too :)

Preheat the oven to 180°C/350°F. Beat the eggs in a bowl, add the olive oil and sugar and mix well. Add the blueberry and grated cheese into the bowl to mix.

Sift the flour, cornstarch and baking powder, add to the bowl, then pour the milk slowly in and stir gently until there is no powdery texture left.

Line a muffin pan with paper liners or use silicon muffin cups. Fill each muffin cup 3/4 of the way, and bake for about 20 minutes or until the top is golden brown.

note: My little boy helped to make the muffins with me, and he added chopped marshmallow before baking. It was also sweet and yummy :)
