I'm always on the lookout for recipes I can tweak to make them lower in calories, but still have the look and taste of those mouthwatering comfort foods. This is one of those recipes. Honestly, doesn't it look like you just ordered takeout chicken from Kentucky Fried Chicken? And it's so crispy... mmm... thanks to the cornflakes, which I was really excited to try. My family absolutely loved them, and when I put the wings on the table, they really looked store-bought.

Ingredients

Serves 4 servings
  1. 2.2 lbswhole chicken wings (about 1 kg)
  2. 1/2 cupall-purpose flour (about 65 grams)
  3. 2eggs
  4. 1/2 teaspooncayenne pepper
  5. 1/2 teaspoonblack pepper
  6. 1 teaspoonsalt
  7. 2 teaspoonsherbes de Provence
  8. 1/2 bunchfresh parsley, chopped
  9. 1/4 cupplain breadcrumbs (about 15 grams)
  10. 1.75 ozgrated Parmesan cheese (about 50 grams, do not use pre-shredded)
  11. 4 cupsunsweetened cornflakes (about 100 grams)
  12. 1little oil

    Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

    Season the chicken wings with salt and pepper.

  3. 3

    In a shallow bowl, beat the 2 eggs.

  4. 4

    In another bowl or plate, combine the flour with the cayenne pepper, a little more salt, and black pepper.

  5. 5

    Place the cornflakes in a bag and crush them with a rolling pin. Pour them into another bowl and add the grated Parmesan, breadcrumbs, herbes de Provence, and chopped parsley. Mix well.

    To bread the wings, first coat the chicken in the flour mixture, then dip in the beaten eggs, and finally coat with the cornflake mixture. Arrange the wings on the prepared baking sheet.

    Once all the wings are on the baking sheet, bake for 15 minutes. After this time, remove the sheet and drizzle a little oil over each wing. Return to the oven and bake for another 20 minutes.
