Diabetic Friendly Fluffy Whole Wheat Pancakes
This is a healthy/diabetic friendly recipe that I came up with that won't spike your glucose levels.

In a medium bowl, add milk and vinegar together and let set for at least 5 minutes.

In another medium bowl, mix all of your dry ingredients. Flour, baking powder, baking soda, salt, and Splenda.

Crack your egg and add to milk. Whisk until well blended. Place butter into microwave safe dish and melt. (Approximately 30-45 seconds) Slowly add butter to egg and milk mixture while constantly whisking. (If you add the butter too fast it will cook your eggs.)

Combine dry ingredients into wet ingredients and mix well.

Heat a griddle or a nonstick pan over medium-low heat. Add 1/2 cup of batter to pan and cook until bubbles form and stay. Then flip pancake and continue cooking until center is firm and no longer wet.

Add your choice of topping and enjoy.
