Every year, there comes a time when we have bowls of tomatoes on the table and I'm faced with the challenge of how to use them all. One of my favorite ways to use them is this fast and easy tomato sauce. It takes less than thirty minutes to make and is so flavorful and delicious.
This sauce is rustic and doesn't involve peeling and de-seeding the tomatoes. The key is the butter, which gives the sauce a rich and luxurious flavor. Cook it when you're low on time, have a stash of fresh, in-season tomatoes, and want to make your family happy.

Melt the butter in a medium sauce pan over medium heat. Add the onion and garlic and cook, stirring frequently until soft.

Add the tomatoes to the butter, onion, and garlic mixture. Cook over medium heat, stirring often, until the tomatoes have disintegrated and become sauce like. You may need to reduce the heat a little to keep the sauce from sticking.

Once the tomato sauce is cooked down, add the basil and stir to incorporate. Serve the sauce on pasta with freshly grated Parmesan cheese.
