Place the onion, garlic,tomatoes,eggplant,peppers on the stove under low heat and sprinkle the curry on top, add salt and cover. Leave to cook for 7 minutes.

Stir and add your eggs. Keep stirring to avoid sticking. Sprinkle your black pepper.

Once the eggs are ready, serve while hot. Enjoy with some bread, Chapati, rice or ugali.
