Twisted Fried Cookies

When I was a young child, my mother was a full-time mother looking after three children. My family was poor and couldn’t afford to buy sweets. But my sisters and I always enjoyed sweets that our mother cooked for us. This is one of them. 1 cup flour, some sugar and 1 egg, and oil to fry, that’s all you need. Even the poor family could afford these. And the flavour of these cookies is part of my childhood.

Steps

  1. 1

The amount of Flour depends on the size of the Egg. Start with 3/4 cup. Mix the Flour, Sugar and Egg to make dough. Gradually add extra flour to make the dough quite firm, so that you can roll out the dough and cut into strips.

  2. 2

Dust the work surface with flour, roll out the dough to about 4 to 5mm thick.

  3. 3

Cut the rolled dough into 2cm wide and 7-8cm long, or whatever size you like. Make a slit in centre, insert one end into the centre slit, then flip over.

  4. 4

Heat oil about depth of 3cm in a large saucepan over medium low heat. Carefully place twisted cookies into the oil. Cook, turning occasionally, for 2 to 3 minutes or until golden.

  5. 5

Transfer the cookies onto a tray lined with paper towel.
