Wash your potatoes and peel them...

Rinse and thinly slice them(in to round shapes)

You could either pre-boil them for three minutes in hot water then deep fry them till they are almost done dont let cook completely OR

Blanch them in oil for 3 minutes, let them rest for 2 minutes, return them in the oil again to get that crispy effect.don't let them cook completely

As the potatoes are cooking finely chop the onions and parsley

Heat the pan, add oil

When the oil has become hot, sauté your onions until light brown...add your potatoes and some salt to taste....toss the potatoes to avoid breaking them when stiring

Add your paprika or red chilli powder if you wish

Toss them again....sprinkle the chopped parsley, toss again and pour in your serving bowl

Lyonnaise potatoes are a main course best served on its own or you can compliment it with any salad of your choice, or any meat of your choice.
