This is a traditional Mexican sweet, especially from the state of Puebla. It has a sweet and tangy flavor and comes in different varieties.

Cook the sweet potatoes with a little water in a pressure cooker or steamer. Remove the skins and mash to make a purée.

In a saucepan, add the sugar with just enough water to barely cover it and heat.

Skim off any foam that forms, then add the lemon juice and sweet potato purée. Stir with a wooden spoon until you can see the bottom of the pan.

When no more steam is released and you can take small portions without it sticking to your hands, remove from heat. Let cool slightly, then add a few drops of flavoring and food coloring as desired.

Let cool, then take small portions with your hands dusted in powdered sugar. Coat with more powdered sugar and wrap in wax paper.
